Beets definitely fall into the category of foods that I love to eat when they're around but had never made myself. If the same is true for you, it doesn't have to be anymore! Beets can be prepared like any other roasted veggie: just toss in olive oil, salt, and pepper, and then let 'em do their thing in the oven. Just make sure to wear gloves when making this recipe, as the beets really will stain your skin purple! If you do get any beet juice on yourself, rub the area with lemon juice and salt to remove it.
Quick and Easy Beets
These beets are perfect for anyone who is tired of the same old roasted veggies, but still wants to keep things simple.
Makes: 6 servings
- 4 beets
- A splash of olive oil
- A pinch of salt
- A pinch of pepper
- Preaheat the oven to 400°F.
- Put on gloves! Peel the beets, then cut them into ½-inch cubes.
- Toss the beets in the olive oil, salt, and pepper.
- Roast the beets for 35 to 40 minutes, until tender
