Carrot Corn Fritters

This recipe really lets its few ingredients shine. This may sound obvious, but these fritters really taste like carrots, corn, and parmesan! The carrots provide a fresh snap, the corn a charred, crisp, sweetness, and the parmesan a nutty savoriness. And, best of all, all of those flavors work together, without competing at all. The end result is a bright side dish, with flavors so complex yet so simple that you’ll just have to close your eyes and savor it.

To start, add the shredded carrots, corn, parmesan, flour, egg, salt, and garlic powder to a bowl.

Then, just mix everything together (you’ll probably need to use your hands), and you’re ready to fry them up!

Grab a handful (a very technical, exact measure) of this mixture and add it to a pan with olive oil over medium heat. As soon as its in the pan, flatten it out into a small pancake shape.

After about 5 minutes, flip the fritters and fry for another 3 minutes on the second side. A good barometer for knowing if they’re ready to be flipped is if you can smell the corn beginning to char. Then, remove the fritters from the pan and place them on paper towels to drain.

Ingredients:
  • 3 cups shredded carrots
  • 1/2 cup parmesan
  • 1 egg
  • 1/2 cup flour
  • 1 cup corn
  • Salt
  • Garlic powder

Instructions:
  1. Combine all ingredients in a bowl and mix together thoroughly.
  2. Place handfuls of this mixture into a pan with olive oil over medium heat, flatteing each ball into a pancake shape as soon as it hits the pan.
  3. Fry each fritter for 5 minutes, then flip and fry for another 3 minutes. Move to paper towels to drain.
