Oat Crust Pizza

As much as my tastes have evolved as I’ve gotten older, pizza has always remained a favorite of mine. But I’ve never made it from scratch; making the dough is such a process, and you have to be so careful with how hot and how long you cook it. This oat crust pizza does away with both of those problems, and is a great recipe to have in your arsenal when you need to whip up something quick. The crust itself is just a few ingredients, which you probably have on hand already, and it’s done cooking in no time at all.

To make the batter, blend oats, egg whites, milk, baking powder, and spices in a food processor. For this pizza, I flavored the crust with salt and zaatar.


After that one simple step, the crust is ready to cook! Add some olive oil to a pan over medium-low heat. Pour this batter into the pan, pancake style, spreading it to 1/4 to 1/2 inch thickness. Cook for 4 minutes, and then flip. At this point, add your toppings! My parents had some assorted things that they were trying to get rid of, so I used the unorthodox but delicious combo of lox, spinach, and feta. If you’re adding cheese and want it to get melty, be sure to cover the pan with a lid.

Cook on this side for another 4 minutes, and voila, you’re done and ready to eat!

In addition to being super easy, this recipe can be taken in a lot of different directions. This batter could be used for more of a dessert crepe, sweetened with a bit of honey and ready for chocolatey and fruity toppings. And, if you can’t decide what flavors you want, just make more! It would be very simple to use this base batter to make a bunch of smaller crusts, which is perfect for a crowd. For all of these practical reasons, in addition to its yumminess, this oat crust recipe is something you’ll want to make again and again.

  • 1 cup oats
  • 3 egg whites
  • 1/4 cup milk
  • 1/4 tsp baking powder
