As we enter winter, everyone is always looking for a warm and hearty comfort food recipe. This pumpkin pulled chicken not only checks off those boxes, but it also extremely flavorful, not to mention super easy. Making this chicken in a slow cooker means there’s barely any prep; all you have to do is chop the onion, throw everything in there, and let the crockpot work its delicious magic.
In addition to really simplifying the preparation of this dish, using a slow cooker also really lets the spices mingle and sink in, bringing this chicken to new levels of flavor. While, of course, you can spice this dish according to your taste, I used a mix highlighted by a slight surprise: ginger. I’ve always thought that ginger should be used more in savory dishes, and trying it here only further convinced me of that. The complexity of flavor and the simple yumminess that this dish achieve with such little prep are sure to make it a winter winner.
Begin by dicing the onion. Then, layer the ingredients in the crockpot from bottom to top as follows: chicken breasts, pumpkin, onion, spices, and chicken broth. Then, turn the crockpot on to its six-hour setting and forget about it. Seriously, that’s it. Read a book, watch a movie, or call a friend.
After you’ve done all that good stuff, grab a fork to pull the chicken. Personally, I was astounded at how easy this was to do, as the chicken gave no resistance. I never truly understood the phrase “falling off the bone tender” until making this. Now, to be fair, this chicken was boneless, but you get my point.
After you’ve pulled the chicken, give the whole thing a good mix to redistribute the liquid evenly. Let this sit for at least 20 minutes so that the chicken, which now has more exposed surface area, can soak up some of the liquid.
One last perk: this recipe could easily be multiplied if you’re serving a lot of friends! So, not only is it delicious, it brings people together. So, there you have it. The last super easy and super tasty comfort recipe you’ll ever need.
